As the optimal brewing temperature is 90C to 96C depending on taste, this variance means the coffee can be over or under-extracted, or worse - variable. I have briefly thought about pre-infusion but the REX C-100 is not capable of this. The PID gives you consistency. But just like the kit I ordered, the threads on the thermocouple M8 according to the specifications are too big for the Gaggia. An extended de-bugging solved the problem: the PID 12v circuit output was reversed, so changing + to solved the problem. With this tight temperature control, you do not have to surf the temperature for frothing because the heater will kick on much sooner than the original thermostat. This would also allow you to switch to PID-controlled brew mode simply by lowering the PID temperature. Thanks, David. Can the PID be put inside the machine or does size constraints and/or heat negate that option? Shades uses an XMT7100 modified to run two SSRs: a DA for the brew temp and an AA for the steam temp. P, I, d, controlling period, digital filter coefficient, and more (for control theory experts only) 2. It should be the power/mains line that comes out of the main power switch, but before the boiler. I also think that you may have less difficulty reaching the thermostat, the 2019+ models have a lot less room to spare inside.
